This vegetarian lasagna is cheesy (of course) with loads of vegetables and sauces. This quick and easy lasagna is a fresh way to take advantage of seasonal produce in a one-dish meal. The recipe is adaptable based on the vegetables available to you.

Vegetable Lasagna is a delicacy served fresh out of the oven. The flavor of roasted veggies, tangy, spicy, creamy sauces, and that extra layer of cheese adds a mind-blowing flavor to the dish.

(You can reduce the amount of cheese used in lasagna to make it a light meal.)

Ingredients

Lasagna Sheets-6-7

Water-3-4 cups

Oil-1tsp

Salt-1tsp

Cheese- 6-7cubes

Veggies: Onions, Capsicum, Corn, and other veggies you prefer (bell peppers, olives, jalapeno, zucchini, etc.)

For Red Sauce

Oil/Butter-2tsp

Tomatoes-4-5

Onions-4-5

Garlic cloves-6-7

Potatoes-1

Tomato Ketchup–2-3tsp

Salt-1tsp

Chili Flakes-2tsp

Black/White Pepper-1tsp

Oregano-1-2tsp

For White Sauce

Oil/Butter-2tsp

All-purpose flour-2tbsp

Milk-4-5cups

Salt-1-2tsp

Oregano-1tsp

Chili Flakes-1-2tsp

Black/White Pepper-1tsp

Garlic paste-1tsp

Method

1. Boil the water and add lasagna sheets. Add oil and water.

2. Boil the pasta sheets till it gets soft.

3. Drain the water and separate the pasta sheets and let it cool down.

For Red Sauce

1. Heat oil/butter in a cooker.

2.Chop onions, tomatoes, potatoes, and garlic.

3. Add these vegetables in the pressure cooker and boil it.

4. Boil it for 7-10mins on a  medium flame.

5. Grind it as it cools down. Add water if required.

6. Add tomato ketchup, salt, oregano, black/white pepper, and chili flakes. Mix it well. Boil it for a while without the lid.

7. Let it cool down.

For White Sauce

1. Heat oil/butter in a pan.

2. Add garlic paste and saute it till it turns brown.

3. Add all-purpose flour and cook it until it starts changing its color.

4. Add milk and stir it. Keep stirring so that no lumps are formed.

6. Boil it and add salt, chili flakes, oregano, and black.white pepper.

For Veggies

1. Heat a little oil in a pan.

2. Add onions, saute it. And then add capsicum and corn.

3. Saute it for 5-7 mins on a medium flame.

4. Add salt, black, white pepper, and chili flakes.

For Lasagna

  1. Take a mold or any container. Spread the red sauce, and top up with veggies and cheese. Add a layer of lasagna sheet.
  2. Add a layer of white sauce. Add a layer of veggies and cheese. Add a layer of lasagna sheet.
  3. Repeat these two steps and top up with cheese.
  4. Bake the lasagna on 180-200 degrees.
  5. Serve hot!
